Basketball Snow Cookies
(a.k.a. Pfefferneuse
or Russian Tea Cookies)

Note: These are yummy, melt-in-your-mouth treats, based on a recipe from Sean Brooks' mother. (I added some almond extract and the name.) Why basketball snow cookies? Because they look like basketballs that have been left out in the snow. :-)
1 c. softened butter (2 sticks, quite soft)
1/2 c. sifted confectioner (powdered) sugar
1.5 t. vanilla extract
1 t. almond extract
2 1/4 c. sifted white or all-purpose flour
1/4 t. salt
1/2 t. cinnamon
3/4 c. finely chopped walnuts (use a blender or Cusinart if possible)
Mix first 4 ingredients thoroughly. In a separate bowl, sift together second group of 3 ingredients. (You might be tempted to skip the sifting step, and who could blame you, but they'll be lighter and better if you don't.) Gradually add flour mix to butter/sugar mix. Add walnuts. Chill dough in fridge for about 45 minutes (not overnight; it will get too firm).
Roll into 1" basketballs (not a lot bigger.) Place on ungreased cookie sheets. Bake for 11 minutes in 400-degree oven. Remove when VERY lightly browned on top. If you cook too long, or on bottom rack, bottoms will burn. Let cool about 10 minutes. Roll in more powdered sugar. Pack in cookie tins with wax paper and more powdered sugar. Delight your friends and neighbors.
Note to those who protest that I represent physical fitness and health and thus should not be advocating sugary desserts: True, maintenance of a healthy, steady weight is important. Exercise and healthy foods are important. So are periodic indulgences in tasty treats. Life is too short to deprive yourself of cookies. At least, that's my philosophy.
Double this recipe, and you'll have about 60-68 small cookies, which will require 3 cookie sheets and will fill 3 cookie tins. Enjoy!
